This is a hectic week for most of us. Last minute holiday preparations and activities make home cooked dinners hard to manage. MEATLESS MONDAY Moo Shu Vegetables I’ll use brown rice tortillas instead of whole wheat and serve with an extra side of veggies like snow peas.
TUESDAY Chicken and Sausage Gumbo I’ll use nitrate-free turkey kielbasa from trader joes and brown rice instead of white. I now try to use Pomi tomatoes in a tetra pack rather than tomatoes in a can which have too much BPA.
WEDNESDAY Tuna Melt with Pacific Natural Organic Creamy Tomato Soup I will make my tuna melt on Udi’s whole grain bread and I like this soup in a pinch because it is BPA free and yummy.
THURSDAY Roast Chicken Chimichangas I’ll use brown rice tortillas instead of whole wheat
