Matcha Tea has tons of health benefits. You can learn more about matcha here. But you don’t have to just drink the tea. You can use it in smoothies like my Shamrock Smoothie and you can bake with it too! Here is a shortbread type cookie that is festive enough for the holidays.
Matcha Green Tea Cookies
1 stick organic butter softened
1 tsp. almond extract
1 tsp. vanilla extract
2 tsp. matcha tea powder
2 cups almond meal (I used Trader Joe’s brand)
Shredded coconut (I used Trader Joes sweetened shredded coconut)
Preheat oven to 300. Cream butter and sugar. Add egg, extracts, matcha powder and mix until blended. Slowly add almond meal until combined. Roll into 1 inch balls and place on ungreased cookie sheet. Flatten with a fork or fingers. Sprinkle coconut on top and bake for 20 minutes or until set and browned on the bottom. Remove from cookie sheet to cool on rack.
