The blizzard has finally ended, and my family and I have been outdoors all morning making the most of the fresh snow. As we tromp in happy, snow covered and red nosed, we all want one thing: hot chocolate! How can a PCOS Diva possibly enjoy this dairy-packed treat without compromising her PCOS lifestyle and feeling lousy later? It’s simple; I make a few easy and tasty swaps. The PCOS Diva lifestyle is not about denial. If there is a comfort food that soothes your soul, enjoy it. Just try to do it in a healthy, but still satisfying way.

Diva Hot Chocolate
1 cup unsweetened coconut milk (for a very decadent version, use the full-fat)
1 1/2 tablespoons cocoa (the higher quality the cocoa, the better your cocoa will taste)
1 tablespoon coconut nectar, honey, coconut sugar or 5-6 drops of NuNaturals liquid stevia (I like mine on the bitter, less sweet side. See if you can get away with just 1 tablespoon of sweetener.)
1/4 teaspoon vanilla extract
1/4 teaspoon peppermint extract
- Combine all ingredients in a saucepan over medium heat and stir occasionally with a whisk until desired temperature (do not allow your milk to boil!).
- Pour into your favorite mug and enjoy!
