PCOS Friendly Snack: Sundried Tomato and Basil Stuffed Mushrooms

Packed with omega 3-rich walnuts, these stuffed mushrooms are a PCOS snack that is rich, satisfying and nutritious.

Sundried Tomato and Basil Stuffed Mushrooms

  • 20 large white button stuffing mushrooms
  • 1 Tbs. extra-virgin olive oil
  • 1 small shallot, minced
  • 1/2 c. diced bell pepper (I use a mix or red and green.)
  • 2 cloves garlic, minced
  • 2 green onions, finely chopped
  • 1 c. baby spinach
  • 1/4 c. jarred sundried tomatoes in oil, drained, chopped
  • 1/4 c. fresh basil, chopped
  • 2 Tbs, fresh parsley, chopped
  • sea salt and ground black pepper to taste
  • 3/4 c. raw walnuts finely chopped
  • 2 tsp. red balsamic vinegar

Preheat the oven to 375 degrees F. Place the musrooms on a rimmed cookie sheet and bake for 10-15 minutes, until the mushrooms have softened and released their moisture. Remove the mushrooms from the oven and transfer to a serving dish. Remove the stems from the mushrooms and set aside. Brush the mushroom caps with olive oil, return them to the cookie sheet, stem side up for 10 more minutes.

While the mushrooms bake, make the filling. Dice the mushroom stems. heat the olive oil in a sautee pan over medium heat. Add the mushroom stems, shallot, bell pepper, garlic, green onions, spinach, tomatoes, basil, parsley, salt, and pepper. Saute the veggies until they are tender and spinach is wilted. Add the walnuts and balsamic vinegar and remove from heat.

Remove the mushroom caps from the oven. Pour off any liquid. Spoon the filling into the caps and bake for an additional 10-12 minutes, until the tops are golden. Serve warm.
