Maple Vanilla (Non-dairy) Ice Cream Recipe
What is Thanksgiving Pie without a scoop of vanilla ice cream? While many of us are trying to avoid dairy, for a variety of reasons (see post) we still want to enjoy the cool, creamy sweetness that only ice cream can offer. Keeping in mind that this still is a mindful indulgence, I think we can have a little rich coconut cream based ice cream and still feel okay in the morning.
I will serve a scoop of this rich and delicious ice cream with my Gluten-free Apple Crumble Pie at my Thanksgiving table this year.
Maple Vanilla (Non-dairy) Ice Cream
2 cans coconut cream (I use Trader Joes brand)
1/3 cup maple syrup
2 T bourbon vanilla extract
1/4 tsp. sea salt
1/4 tsp. cinnamon
Beat with an electric mixer until smooth. Taste and adjust vanilla, sweetener and cinnamon. I like a strong cinnamon and vanilla taste, so I added an additional teaspoon of vanilla and 1/4 tsp. vanilla. Since the Pie is sweet, I opted for a more mild sweet taste for this ice cream and did not add more sweetener.
Pour into a Cuisinart Ice Cream maker and churn for about 20 minutes. Transfer to container and freeze until ready to serve.
