PCOS-Friendly Snack: Roasted Pepitas (2 Ways)

Either way you make them, roasted pepitas make a delicious and nutritious PCOS-friendly snack. I keep some around for when I am craving something crunchy. Sometimes, I put a few of the Savor Spiced Pepitas on top of a salad to give it a little kick!
Sweet Spiced Pepitas
Makes 2 cups
- 2 c. pepitas
- 2 Tbs. coconut sugar
- 1 Tbs. virgin coconut oil (liquid)
- 2 tsp.Pumpkin Pie Spice
- 1/4 tsp. finely ground sea salt
Preheat the oven to 300 degrees F. Line a cookie sheet with parchment paper. Combine the pepitas, coconut sugar, coconut oil, Pumpkin Pie Spice, and salt in a bowl and mix well. Spread the seeds in a single layer on the prepared cookie sheet. Bake for 20 minutes, stirring occasionally. The seeds will be golden and crunchy when done. Cool and store in an airtight container.
Variation:
To make Savory Spiced Pepitas, substitute Southwest Seasoning for Pumpkin Pie Spice, reduce the amount of coconut sugar to 2 teaspoons, and replace the coconut oil with lime juice.
Pumpkin Pie Spice
Combine well: 1/4 c. ground cinnamon, 2 tsp. grated nutmeg, 2 tsp. allspice, 1 tsp. ginger, & 1/2 tsp. cloves
Southwest Seasoning
Combine well: 2 Tbs. chili powder, 1 Tbs. ground cumin, 1 Tbs. ground seasalt, 2 tsp. paprika, 2 tsp. garlic powder, 1 tsp. ground black pepper, 1 tsp. onion powder
1 tsp. dried oregano, & 1/2 tsp. cayenne pepper (optional)
