Roasted Asparagus with Lemon Thyme Dipping Sauce
Who needs chips and dip when you have this PCOS-friendly appetizer handy! This is one of my favorite appetizer recipes to serve at holiday parties. I roast the asparagus right before we leave for the party. The dish is decadent with the warm asparagus dipped in the cool dipping sauce. You can also use roasted green beans.
Roasted Asparagus with Lemon Thyme Dipping Sauce
2 lbs. asparagus (pencil-thin are best)
Olive oil
Sea salt to taste
1-2 tsp. Reduced balsamic vinegar (I like to use Trader Joes Balsamic Glaze)
Trim ends on asparagus and place on baking sheet. Drizzle with olive oil and sprinkle with salt. Roast at 425 until crisp-tender about 8-10 minutes. Watch closely so you don’t overcook. Drizzle with Balsamic Glaze.
Lemon Thyme Dipping Sauce
1/3 cup olive oil mayonnaise
1/3 cup Greek yogurt
1 tsp. lemon zest
1 T lemon juice
1 small clove garlic, minced
2 T shallots minced
1 T capers rinsed and drained
2 tsp. fresh thyme
Black pepper to taste
Combine all ingredients and chill for at least 1 hour. Garnish dip with a sprig of thyme. The asparagus is best served warm with the chilled dipping sauce.
