MENU PLAN August Week 1
This is the perfect time of year to visit your local farmer’s market. If you don’t know of a local farm or farmer’s market in your area check out Local Harvest.org. LocalHarvest is America’s leading organic and local food website. They maintain a definitive and reliable “living” public nationwide directory of small farms, farmers markets, and other local food sources. This week I challenge you to visit a local farm and pick up fresh ingredients for this week’s menu plan. I will focus on Farmer’s Market recipes so you can enjoy all the fresh tastes this summer season has to offer.
MEATLESS MONDAY Bean and Heirloom Tomato Salad with Honey Vinaigrette and Mexican Corn Salad Please don’t use canned corn for this. I like to use corn raw off the cob.
TUESDAY Basil Shrimp and Zucchini Pasta – I will use quinoa or brown rice pasta for this dish and will serve with a mixed greens salad.
WEDNESDAY Provencal Summer Vegetables Simple Grilled Halibut
THURSDAY Summer Chicken Stew with Ratatouille Vegetables
FRIDAY Thyme, Pork Chop & Pineapple Skillet Supper Serve with whole grain pilaf and a baby spinach salad.
