Diva Fudgeypops
Fudge Bars, Fudge Pops, Fudgicles, Fudgisicles, Pudding Pops… no matter what you called them, if you grew up in the United States, you know what I am talking about. Everyone loved those drippy, chocolaty frozen treats. I was no exception. One look at the label though, and you know that I would never eat one or give them to my kids.
Here’s the ingredient list from a popular 100 calorie chocolate popsicle:
Ingredients: nonfat milk, sugar, corn syrup, whey, high fructose corn syrup, water, palm oil, cocoa processed with alkali, tricalcium phosphate, mono and diglycerides, cellulose gum, guar gum, malt powder, salt, polysorbate 80, polysorbate 65, carrageenan
Not willing to give up this summer treat, I invented my own (healthier & tastier) version! My recipe contains upgraded ingredients for better flavor and nutrition. For example, protein powder not only adds protein, but enhances the creamy texture. Cacao powder is a powerful antioxidant and contains the highest source of magnesium and chromium of any food. To keep it PCOS Diva friendly, these pops are also dairy free and have no added sugar.
I am thrilled to have a bar that satisfies the chocolate treat craving while actually having some nutritional value! Being a Diva is not about deprivation, and this treat is a great upgrade from those old, chemical filled fudgicles of my youth. The kids loved them too! Here’s my secret recipe:
Diva Fudgeypops
Makes 10 popsicles
- 2 heaping tablespoons semi-sweet chocolate chips (I use Enjoy Life brand.)
- 1 can lite coconut milk
- 2 tablespoons raw cacao powder
- 1 scoop PCOS Diva Power Protein Powder
- 1 tsp. vanilla extract
Melt chocolate chips. In a blender, add milk, melted chocolate, cacao powder, protein powder and vanilla. Blend until well combined. Pour mixture into popsicle molds and freeze overnight.
