MENU PLAN October Week 1

Just got back from the grocery store and I am always amazed at how many cashiers have no idea what the vegetables are in my cart.  Squash in now in season and is on sale, so I picked up butternut, buttercup and acorn. The cashier picked up the buttercup squash and said, “I have no idea what this is.”   Don’t be afraid of becoming acquainted with new produce.  Buttercup squash is actually my favorite squash, but it looks kind of intimidating if you have never cooked it before.  The easiest thing to do is to cut it in half, scoop out the seeds, prick some holes in the skin with a fork and roast at 350 in a pan with a little water, cut side down until soft.  Then you just scoop out the squash and add a little butter, cinnamon, maple syrup (be creative!) or just enjoy as it is naturally.  This week my Menu Plan features both butternut and acorn squash.  I challenge you to try a new squash this week!  Please post any new squash recipes in the comments below.

MEATLESS MONDAY Veg Head Three Bean Chili Add just a sprinkle of cheese on top rather than what is called for in the recipe.  Serve with a simple cabbage slaw.

  1. Ok, I’m sure this isn’t the right spot to send a question in…. but I can’t figure out where it’s more appropriate! And I need HELP! 🙂
    So…. the facial hair problem – what do other women with PCOS do about it?? Mine’s pretty thick! And dark, some of it. I’ve just been shaving (which is sooooo much fun and makes me feel so feminine). Waxing? I’d LOVE recommendations on specific waxing products that work well! There’s just too many out there. Someday I hope to be able to afford laser hair removal. Til then – I’m so embarrassed about my face! 🙁 Ideas??

      I have only used laser hair removal and it works wonders. I am not familiar with waxes. Save up for the laser it is well worth it.

      I’ve been tweezing it out and waxing mostly. I did 2 laser treatments and most of it went away at first. Now i think i have new hairs in new spots. Argh. So frustrating.
      I also found that when I was on birth control, I had less of it.
      Now that I stopped, it is back like crazy. My hope is, though, to really take care of myself and take pcos under control, so, hopefully, it will subside.
      Then i’ll save for laser and get rid of it once again – as i heard the hairs that already turned terminal won’t become transparent and thin again.

    I was told to never shave your face; it’s hell on a woman’s skin. I’ve been tweezing, I also trim my side burns with scissors and instead of waxing I do sugaring. Sugaring is similar to waxing, in that it pulls hair out from the root, but while wax attaches to the skin and hair, sugaring only attaches to the hair and sugar paste is water soluble as well. If possible find a professional that does natural skin care and that offers sugaring. If there aren’t any in your area and you can mix up a batch at home.
