Peanut Butter Buckeyes- a PCOS Diet Friendly Dessert
Here is a treat that is PCOS Diet friendly and tastes amazing. Like any indulgence, these Peanut Butter Buckeyes should be savored mindfully and in moderation.
Peanut Butter Buckeyes
Makes 2 dozen balls
1 cup PCOS Diva Power Protein
1/2 cup natural crunchy peanut butter
1/2 cup honey
1 tsp. vanilla
½ cup bittersweet chocolate chips- 60% cacao (I like Ghirardelli.)
In a medium bowl, combine the protein powder, peanut butter, honey and vanilla, and blend with a mixer until combined. Form 1” balls and refrigerate until set. Melt chocolate in a heavy saucepan or microwave. Using a skewer, lift a ball and dip halfway in the chocolate. Place ball on wax or parchment paper until set.
