Ice Cream You Scream…

Last Christmas my mother gave me a Cuisinart Ice Cream Maker.  It truly is the gift that keeps on giving.  I have been making ice cream with coconut milk for a while and I’ll be honest,  I don’t even miss the heavy cream.  This simple base recipe is ready to embellish with whatever suits my fancy.  Since it is the peak of summer and there is an abundance of ripe berries and cherries,  it is time to add them to my coconut based ice cream.   My favorite flavor combination is vanilla cherry chip.  Here is how to get started:

  • 2 – 14 oz. can full fat coconut milk
  • 1/3-1/2 cup of honey or agave (sweeten to taste after you have added fruit puree)
  • 2T vanilla

For the add-in part – I’ll puree 1 cup of pitted bing cherries and add to the mixture and then freeze in the ice cream maker.  When it is almost set, I’ll add another cup of halved cherries and 1/2c dark chocolate chips. The mixture will then need to set in the freezer for a few hours.  The ice cream will last a week or two in the freezer.

Remember, just because this is a healthy dessert, it still is dessert and should be savored accordingly.  Enjoy!

  1. I made the vanilla cherry chip tonight and I was so pleasantly surprised! It tastes like REAL ice cream…better than some brands I’ve had. I did add a couple packs of Stevia to the cherries and let them sit for a bit, I’ll admit. That was the only thing I changed. It turned out great. Thanks! 🙂

  2. Excellent. I’ve been considering dusting off my ice cream maker (unused since I became dairy-sensitive) and seeing what can be done with coconut or almond milk. I think that is about to move into high gear now!

  3. I use my ice-cream maker with fruit purée. Pineapple blended makes a delicious whip. I just blend the fruit with some fresh Stevia Leaves or the powdered stuff and it’s sweet enough. The next best one is watermelon, raspberry lime 🙂

  4. Can i make it without ice cream maker since i don’t have one or wud you recommend a good priced one that’s good quality and easy to use ?

    Several Divas suggested a high powered blender – I will try my Vitamix next time. I have a cuisinart ice-cream maker it cost around $50.

  6. Are you using the full fat coconut milk from that can (that has that condensed milk consistency) or using something like the So Delicious brand that is in the milk section of the store? Can’t wait to try this…I’m going to talk my momma into bring her ice cream maker over!

  8. I have a strawberry version spinning in my ice cream maker right now!! The strawberries were so sweet I barely needed any honey at all!
    Did one can full fat and one can lower fat… I realize this might take away from the decatancy, but I wanted it to be a little lighter!

  9. When you ladies make this, do you buy bing cherries and pit them yourself or do you buy the jar of cherries? All the jars of cherries I found had corn syrup. 🙁 Any tips for pitting the cherries?

  10. I always use fresh cherries and pit them myself. You can actually get a cherry pitter at a kitchen accessory store like Williams Sonoma. Worth every penny!
