MENU PLAN- November Week 4
Hope everyone had a wonderful Thanksgiving. If you happened to over-indulge over the long holiday weekend, remember that you are just one meal or snack away from getting back on track. Start by planning out your dinners and make extras to take for lunch. This week’s menu features seasonal super foods like cabbage, Brussels sprouts and root vegetables.
MEATLESS MONDAY Huevos Rancheros Verdes Serve with brown rice and slices of avocado and tomato.
TUESDAY Cincinnati Turkey Chili This recipe is really delicious. Serve with a little brown rice spaghetti and Sweet and Spicy Cole Slaw
WEDNESDAY Maple Chili Glazed Pork Medalions Sauteed Spinach and Roasted Root Vegetables
THURSDAYChicken with Fennel Carrots and Couscous I’ll use brown rice couscous from Lundeberg Farms and serve with some steamed broccoli
FRIDAY Beef Pot Roast with Winter Root Vegetables Roasted Brussels Sprouts with Pears
