PCOS Diet-Friendly Summer Fruit Recipes

PCOS Divas eat with the season, and I am happy to announce that summer fruit is bountiful!
From stone fruits (peaches, cherries, plums, and apricots) to a wide variety of berries, these delectable fruits are plentiful at this time of year which means they are at their freshest in your local market and farmer’s market. I always try to eat with the season because that is when fruits and vegetables tend to be the most flavorful and inexpensive.
Fruit is an important component of the PCOS Diva diet. While it does contain sugar, and should be consumed in moderation, fruit makes a satisfying dessert or garnish. Fruit is packed with vitamins, fiber, and nutrients, especially berries which are loaded with antioxidants.
In celebration of the season, I created these summer fruit recipes that my family loved! I hope you will too.
Grilled Wild Salmon with Rainier Cherry Salsa
Makes 4 servings
4 ct. 6 ounce wild salmon fillets
2 tsp. olive oil
sea salt and ground black pepper
Prepare grill and heat to 400 degrees. Drizzle olive oil on salmon fillets and sprinkle with salt and pepper. Place salmon on grill rack skin side down. Grill for about 15 minutes or until fish is opaque and flakes easily. Don’t overcook. Serve with Cherry Salsa.
Cherry Salsa
2 cups Rainier cherries, pitted and coarsely chopped (about 3/4 lb.)
1 clove garlic, minced
1/4 cup green onions, finely sliced
1/4 cup cilantro, minced
1 lime, juiced
sea salt to taste
Combine all ingredients. Chill for 30 minutes to allow the flavors to meld, then serve over salmon fillets.
